Cut the chicken breast into strips, about 1 inch wide.

Bread the Chicken
Dip each chicken strip first in the flour, shaking off excess, then into the egg mixture, and finally coat with the breadcrumb mixture. Place on a plate.

In a large skillet, heat about 2 cups of oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the breaded chicken fingers to the hot oil in batches. Fry for about 5-6 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Peel and cut the potatoes into thin strips, about 1/4 inch wide.
