    Prepare the Calamari

    Begin by cleaning the fresh calamari. Remove the head, innards, and skin. Cut the body into 1/2-inch rings and set aside.

    Soak in Buttermilk

    Place the calamari rings in a bowl and pour the buttermilk over them. Allow them to soak for at least 1 hour in the refrigerator to tenderize the meat.

Breading Mixture

    Prepare the Breading

    In a large bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, salt, and black pepper. Mix well until all the dry ingredients are fully incorporated.

Frying

    Heat the Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the breading mixture into the oil; if it sizzles, it’s ready for frying.

    Coat the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the breading mixture until they are well coated. Shake off any excess flour.

    Fry the Calamari

    Carefully place the coated calamari rings into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes or until they turn golden brown and crisp.

    Once fried, remove the calamari using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve immediately with lemon wedges and garnish with chopped parsley.
