Prepare the Ingredients
Finely chop the fresh parsley and sun dried tomatoes. Mince the garlic cloves.

Combine the Base Ingredients
In a mixing bowl, combine the chopped parsley, chopped sun dried tomatoes, minced garlic, red hot pepper flakes, and dried oregano.

Add Olive Oil
Pour the olive oil into the mixing bowl with the other ingredients. Stir well to combine all the flavors.

Adjust Seasoning
Taste the chimichurri and adjust seasoning if necessary. You may add more red hot pepper flakes for extra heat or more olive oil for a smoother consistency.

Chimichurri can be served immediately or stored in an airtight container in the refrigerator for up to one week. The flavors will intensify as it sits.
