Prepare the broth
In a large pot, bring the chicken or seafood broth to a boil. Stir in red curry paste and fish sauce, mixing well.

Cook the seafood and tofu
Add the shrimp, squid, fish balls, and tofu to the boiling broth. Cook for about 5-7 minutes until the seafood is cooked through.

Add the mushrooms and noodles
Add the soaked and sliced white jelly mushrooms to the pot, followed by the rice noodles. Cook for an additional 3-4 minutes until the noodles are tender.

Finish with greens
Stir in the chopped scallions and Chinese watercress just before serving, allowing them to wilt slightly.

Serve
