Prepare the Ingredients

Wash and slice all the vegetables: bell peppers, carrot, celery, baby corn, water chestnut, fresh mushrooms, onion, and scallions.

Sauté the Cashews

In a large skillet, heat 1 tablespoon of oil over medium heat. Add the cashew nuts and sauté until golden brown. Remove from the skillet and set aside.

Cook the Vegetables

In the same skillet, add the remaining tablespoon of oil. Add the sliced onion and cook until translucent. Then add the bell peppers, carrot, celery, baby corn, water chestnut, and fresh mushrooms. Sauté for about 5-7 minutes until the vegetables are tender.

Add the Cashews and Sauce

Return the sautéed cashews to the skillet. Add the chili garlic sauce, scallions, salt, and pepper. Stir well to combine all the ingredients and cook for another 2-3 minutes.

Serve

Remove from heat and serve the cashew nut sauce warm, paired with rice or noodles.
