Prepare the Noodles
Soak the flat rice noodles in warm water for about 30 minutes until they soften. Drain and set aside.

Cook the Meat
In a large wok or skillet, heat 1 tablespoon of oil over medium-high heat. Add the choice of meat and stir-fry until cooked through, about 5-7 minutes. Remove from the pan and set aside.

Stir-fry the Vegetables
In the same wok, add another tablespoon of oil. Add minced garlic and stir-fry for about 30 seconds until fragrant. Then add broccoli florets and stir-fry for another 3-4 minutes until they are bright green and tender-crisp.

Prepare the Gravy Sauce
In a bowl, mix together soy sauce, oyster sauce, cornstarch, water, salt, and pepper until combined.

Combine Everything
Add the drained noodles and cooked meat back into the wok with the broccoli. Pour the gravy sauce over the top and toss everything together until the noodles are well coated and the sauce has thickened, about 2-3 minutes.

Serve
Remove from heat and serve hot, garnished with extra soy sauce or chili flakes if desired.
