Prepare the Noodles
Soak the flat rice noodles in warm water for about 30 minutes or until soft. Drain and set aside.

Cook the Chicken and Squid
In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and stir-fry until it's nearly cooked through. Add the squid and continue to stir-fry for another 2-3 minutes until the squid is opaque.

Add Aromatics
Push the chicken and squid to one side of the wok. Add another tablespoon of vegetable oil and then add the minced garlic. Stir-fry for about 30 seconds until fragrant.

Combine Ingredients
Add the soaked noodles to the wok along with the soy sauce, oyster sauce, and black pepper. Toss everything together to combine well. Stir-fry for about 2-3 minutes until the noodles are heated through.

Finish with Lettuce and Scallions
Add the shredded lettuce and chopped scallions to the wok. Drizzle with sesame oil and toss everything together just until the lettuce wilts slightly.

Serve
