1. Prep the Ingredients
Chop the scallions (both white and green parts) and set aside. Beat the eggs in a bowl and set aside.
2. Heat the Pan
In a large skillet or wok, heat the vegetable oil over medium-high heat.
3. Cook the Eggs
Add the beaten eggs to the skillet and scramble until just set. Remove the eggs from the pan and set aside.
4. Sauté Aromatics
In the same skillet, add a little more oil if necessary and sauté the minced garlic and the white parts of the scallions until fragrant, about 30 seconds.
5. Add Rice
Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir-fry for about 2-3 minutes until heated through.
6. Combine Ingredients
Add the crab meat, scrambled eggs, soy sauce, sesame oil, salt, and black pepper. Stir gently to combine and heat through, about 2-3 minutes.
7. Finish with Scallions
Add the green parts of the scallions and give the fried rice a final toss.
8. Serve
Remove from heat and serve hot, garnished with additional scallions if desired.
