Preparation
1. Prepare the Dough
In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. Mix Wet Ingredients
In another bowl, mix the milk, eggs, vanilla extract, and melted butter until well combined.
3. Combine Mixtures
Pour the wet ingredients into the dry ingredients, and mix until just combined. Do not overmix.
4. Shape the Donuts
Turn the dough onto a floured surface and roll it out to about 1/2 inch thick. Cut out donuts using a donut cutter or two round cutters.
5. Fry the Donuts
In a deep pot, heat oil to 375°F (190°C). Fry donuts until golden brown, about 1-2 minutes per side. Remove and drain on paper towels.
6. Prepare the Glaze
In a bowl, mix powdered sugar with a few tablespoons of milk until smooth. For chocolate glaze, add cocoa powder and mix well.
7. Finish and Serve
Dip the cooled donuts into the glaze and add toppings as desired. Serve fresh with locally-roasted coffee.
