Authentic Detroit Style Pizza (DSP) with a caramelized cheese crust. Cut into six pieces; made for one, but feeds two, sometimes three. All fat pies are finished with signature THICC shaved parmigiano.

Make the Dough
In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy. Add flour, salt, and olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Form it into a ball.

First Rise
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1-1.5 hours until doubled in size.

Prepare the Pan
Grease a 9x13 inch baking pan with olive oil. Spread the dough into the pan, stretching it to the edges.

Assemble the Pizza
Layer the mozzarella cheese evenly over the dough. Add pepperoni slices on top, then pour pizza sauce over the cheese. Sprinkle shaved Parmigiano-Reggiano on top.

Second Rise
Cover the assembled pizza and let it rise for another 30 minutes.

Bake the Pizza
Preheat the oven to 500°F (260°C). Bake the pizza for 15-20 minutes until the cheese is bubbly and the edges are golden brown.

Let the pizza cool for a few minutes before slicing into six pieces. Enjoy!
