    Prepare the Broth

    In a large pot, combine the pork bones and water. Bring to a boil, then reduce heat and simmer for 12 hours. Skim off any impurities that rise to the surface.

    Season the Broth

    After simmering, add soy sauce, mirin, and salt to the broth. Stir well and let it simmer for another 30 minutes.

    Cook the Noodles

    In a separate pot, bring water to a boil. Add the eggless thin ramen noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare Toppings

    Slice the chashu pork and chop the green onions. Prepare your serving bowls with nori sheets, pickled ginger, and any additional toppings you like.

    Assemble the Ramen

    In a bowl, place a portion of cooked noodles, ladle the hot broth over, and top with sliced chashu pork, green onions, and nori. Add pickled ginger to taste.
