    Prepare the Rice

    Rinse the wild rice under cold water to remove any debris.

    Cook the Rice

    In a medium saucepan, combine the rinsed wild rice, water or vegetable broth, and salt. Bring to a boil over medium-high heat, then reduce to a simmer, cover, and cook for about 45-60 minutes or until the rice is tender and has split open.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic, sliced mushrooms, diced carrots, and diced celery. Sauté for another 5-7 minutes until the vegetables are tender.

    Once the wild rice is cooked, drain any excess liquid if necessary. Add the cooked rice to the skillet with the sautéed vegetables. Stir in the chopped parsley and mix well. Cook for an additional 2-3 minutes to heat through and combine flavors. Serve warm.
