Preparation Steps

  1. 1

    Prepare the Ingredients

Dice the pork shoulder into bite-sized pieces, peel and cube the potatoes, chop the onion, and mince the garlic. Set aside.

  2. 2

    Sauté the Pork

In a large pot, heat the olive oil over medium heat. Add the diced pork shoulder and cook until browned on all sides, about 5-7 minutes.

  3. 3

    Add Vegetables and Seasonings

Stir in the chopped onion, minced garlic, cumin, salt, and black pepper. Cook for another 2-3 minutes until the onion is translucent.

  4. 4

    Combine with Broth

Add the chicken broth, cubed potatoes, and green chile peppers to the pot. Bring to a boil.

  5. 5

    Simmer the Stew

Reduce the heat to low, cover, and let the stew simmer for about 1 hour or until the pork is tender and the potatoes are cooked through.

  6. 6

    Adjust Seasoning and Serve

Taste and adjust seasoning with more salt and pepper if needed. Serve hot in cups.
