Tortilla Chips and Toppings
Method
Preparation
- 1
Make the Tortilla Chips
Heat the vegetable oil in a deep pan over medium heat. Cut the corn tortillas into quarters. Once the oil is hot, fry the tortilla pieces in batches until golden and crispy, about 2-3 minutes per batch. Remove and drain on paper towels, season with salt.
- 2
Prepare the Nachos
On a large serving platter, spread a generous layer of house-made tortilla chips. Evenly distribute the pinto beans over the chips, followed by the queso blanco. Drizzle the red chile tomatillo sauce on top.
- 3
Garnish
Slice fresh jalapeños and scatter them over the nachos to taste. Serve immediately while warm.
