    Wash and peel the russet potatoes. Cut them into thin, shoestring-sized strips, approximately 1/8 inch thick.

    Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Drain the soaked potatoes and lay them out on a clean kitchen towel. Pat them dry to remove as much moisture as possible.

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C) over medium heat.
