    Prepare the Yuca

    Peel the yuca and cut it into thick slices, about 2 inches long. Place the yuca in a large pot of salted water and bring to a boil. Cook until the yuca is tender, about 20-25 minutes. Drain and set aside.

    Fry the Yuca

    In a large skillet, heat the vegetable oil over medium heat. Once hot, add the boiled yuca slices and fry until golden brown and crispy on all sides. Remove and place on a paper towel to drain excess oil.

    Make the Aji Sauce

    In a blender, combine the aji amarillo peppers, cream cheese, milk, garlic, salt, and black pepper. Blend until smooth and creamy. If the sauce is too thick, add a little more milk until you reach the desired consistency.

    Transfer the aji sauce to a saucepan over low heat. Stir in the grated yellow cheese until melted and smooth.

    Place the fried yuca on a serving platter, drizzle generously with the creamy aji sauce, and garnish with chopped cilantro. Serve hot.
