Beef Sautéed with Onions, Tomatoes, Fried Potatoes served with Rice & 2 Fried Eggs on Top
In a pot, add 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat, cover, and let simmer for about 15-20 minutes or until rice is cooked.
Peel and cut the potatoes into thin strips. Heat 2 tablespoons of olive oil in a frying pan over medium heat. Fry the potatoes until golden and crispy. Remove and drain on paper towels, season with salt.
Cut the beef sirloin into thin strips. In the same pan, add 2 tablespoons of olive oil and heat over medium-high heat. Add minced garlic and sauté for about 1 minute.
Add sliced onions and cook until translucent. Then, add chopped tomatoes and beef strips. Season with salt and black pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
In a separate pan, add 1 tablespoon of olive oil and fry the eggs sunny-side up or to your preference.
On a plate, serve a portion of the rice, topped with the beef mixture and fried potatoes. Place 1-2 fried eggs on top and serve immediately.
