Jalea Preparation

    Prepare the Batter

    In a mixing bowl, combine flour, cornstarch, salt, and black pepper. Gradually add cold water, whisking until smooth.

    Fry the Seafood

    Heat vegetable oil in a deep pan. Dip the fish, shrimp, and calamari into the batter and fry until golden brown. Remove and drain on paper towels.

Arroz con Mariscos Preparation

    Sauté the Aromatics

    In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, and red bell pepper. Sauté until softened.

    Cook the Rice

    Stir in rice and tomato paste, cooking for 2 minutes. Add fish broth, mixed seafood, saffron, salt, and black pepper. Bring to a boil, then reduce heat and cover, simmering until rice is cooked.

Ceviche Preparation

    Marinate the Fish

    In a bowl, combine diced fish with lime juice, salt, and minced jalapeño. Let it marinate in the refrigerator for at least 30 minutes.

    Finish the Ceviche

    Add sliced red onion and chopped cilantro to the marinated fish. Serve chilled with avocado slices on top.
