    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sauce

    In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the aji amarillo paste and cook for another 2 minutes. Pour in the evaporated milk and bring to a simmer. Reduce heat to low and add the yellow cheese, stirring until melted and smooth. Season with salt and black pepper to taste.

    Cook the Skirt Steak

    Season the skirt steak with olive oil, salt, and black pepper. Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for a few minutes before slicing.

    Combine and Serve

    Toss the cooked noodles with the creamy aji sauce until well coated. Serve the noodles topped with slices of grilled skirt steak and garnish with fresh parsley.
