    In a blender, combine the aji amarillo peppers (seeds removed), heavy cream, garlic cloves, and queso fresco. Blend until smooth and creamy. If the sauce is too thick, add a bit of water to reach desired consistency.

    Season the beef steaks with salt and pepper. In a skillet, heat the olive oil over medium-high heat. Cook the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for a few minutes before slicing.
