Prepare the Plantains
Peel the green plantains and cut them into 1-inch slices. In a large pot, bring salted water to a boil and add the plantain slices. Cook until tender, about 15-20 minutes.

Fry the Garlic
In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic cloves and sauté until golden brown. Remove from heat and set aside.

Mash the Plantains
Drain the cooked plantains and transfer them to a large bowl. Using a potato masher, mash the plantains while gradually adding chicken broth and the sautéed garlic (with the olive oil) until smooth and well-combined. Season with salt and black pepper to taste.

Form the Mofongo
Shape the mashed plantains into a dome or ball. You can use a bowl to help mold it if needed.

Serve with Chicharrón
Place the mofongo on a serving plate and top it with fried pork chicharrón. Drizzle with additional olive oil if desired. Serve immediately.
