    Fry the Plantains

    Peel the green plantains and cut them into 1-inch thick slices. Heat oil in a deep frying pan over medium heat. Fry the plantain slices until they are golden brown on all sides, about 5-7 minutes. Remove from the oil and drain on paper towels.

    Prepare the Pork

    If using pork belly, cut it into small pieces and sauté it in a separate pan until crispy. If using chicharrón, simply crush it into smaller bits.

    Mash the Ingredients

    In a large bowl, combine the fried plantains, garlic cloves, and cooked pork. Use a mortar and pestle or a sturdy bowl and a masher to mash the mixture together. As you mash, gradually add the chicken broth to achieve a smooth, thick consistency.

    Season and Serve

    Add salt and black pepper to taste. Once well combined and seasoned, mold the mofongo into a bowl or serve as is. Garnish with optional parsley or cilantro before serving.
