Prepare the Plantains
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.

Heat the Oil
In a large skillet, heat the vegetable oil over medium heat until it's hot but not smoking.

Fry the Plantains
Carefully place the sliced plantains in the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side, or until they are golden brown and caramelized.

Drain and Season
Once cooked, remove the plantains from the skillet and let them drain on paper towels. Sprinkle with salt to taste.
