Lomo Saltado

Preparation

Prepare the Fries
Heat oil in a pan and fry the potato sticks until golden and crispy. Remove and drain on paper towels, seasoning with salt.

Sauté the Beef
In a large skillet, heat olive oil over medium-high heat. Add the sliced beef and cook until browned. Add minced garlic, onions, and sauté until the onions are translucent.

Add Vegetables
Add the sliced tomatoes, soy sauce, and vinegar to the skillet. Stir well and cook for an additional 2-3 minutes.

Finish with Cilantro
Remove from heat and stir in chopped cilantro.

Prepare Chaufa de Vegetales
In another pan, add a tablespoon of olive oil, sauté chopped vegetables (carrots, bell peppers, peas) and add cooked rice. Stir in soy sauce to taste. Cook until heated through.

Serve
Serve the lomo saltado over the chaufa de vegetales with fried potatoes on the side.
