Cooking Instructions

  1. 1

    Prepare the Rice

In a pot, add 1 cup of water and a pinch of salt. Bring to a boil, then add the white rice. Reduce heat to low, cover, and cook for about 15-20 minutes or until the rice is tender and water is absorbed.

  2. 2

    Cook the Skirt Steak

Season the skirt steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the steak and cook for about 3-4 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from heat and let it rest.

  3. 3

    Fry the Sweet Plantains

Peel and slice the sweet plantains diagonally. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

  4. 4

    Fry the Eggs

In the same pan used for the plantains, crack the eggs and fry to your desired doneness, sunny-side up or over-easy.

  5. 5

    Prepare the French Fries

If using frozen French fries, cook them according to package instructions until crispy. If making from scratch, slice potatoes into fries, soak in water for 30 minutes, dry, and then fry until golden and crispy.

  6. 6

    Plate and Serve

On a large plate, serve a portion of rice, top with sliced skirt steak, add the French fries, fried sweet plantains, and finally, place the fried eggs on top. Enjoy your Churrasco a lo Pobre!
