Cooking Instructions

  1. 1

    Prepare the Beans

Rinse the pinto beans under cold water, then soak them in water for at least 6 hours or overnight. Drain and rinse again.

  2. 2

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

  3. 3

    Cook the Beans

Add the soaked pinto beans to the pot along with the vegetable broth, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce heat to low and cover. Simmer for about 1.5 to 2 hours, or until the beans are tender.

  4. 4

    Add Creaminess

Once the beans are cooked, stir in the coconut milk and cook for an additional 10 minutes to heat through and combine flavors.

  5. 5

    Serve

Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
