    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the diced chicken and cook until it's browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and scramble them until fully cooked. Remove and set aside with the chicken.

    Add the cooked rice to the skillet and stir to combine with the garlic and ginger. Then add the cooked chicken, scrambled eggs, and chopped green onions.

    Pour the soy sauce over the rice mixture and season with salt and pepper to taste. Stir-fry everything together for about 3-5 minutes, ensuring that the rice is heated through and the flavors are well combined.
