    Prepare the Lamb

    In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent. Add the minced garlic and cook for another minute.

    Cook the Lamb

    Add the lamb shoulder to the pot, searing it on all sides until browned. Season with salt, black pepper, and Yemeni spice mix, stirring to coat the meat evenly.

    Add Vegetables and Water

    Stir in the diced tomatoes, carrots, and potatoes. Pour in the water and bring to a boil. Once boiling, reduce the heat to low and cover the pot.

    Simmer

    Let it simmer for about 1.5 to 2 hours, or until the lamb is tender and easily shredded with a fork. Stir occasionally and add more water if necessary.

    Shred the Lamb

    Once the lamb is tender, remove it from the pot and shred it using two forks. Return the shredded lamb back to the pot and mix well with the vegetables and sauce.

    Serve

    Serve hot with rice or flatbread, garnished with fresh herbs if desired.
