    Prepare the Ingredients

    Slice the lamb liver into thin strips. Dice the tomatoes, slice the green bell pepper, and cut the potatoes into thin rounds. Mince the garlic.

    Cook the Potatoes

    In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the potato slices and season with salt and black pepper. Cook until golden brown and crispy, about 5-7 minutes. Remove and set aside.

    Sizzle the Liver

    In the same skillet, add the remaining olive oil. Once hot, add the minced garlic and sauté for about 30 seconds. Add the sliced lamb liver, cumin, and season with salt and black pepper. Cook for about 3-4 minutes until browned and charred on the outside but still tender inside.

    Add Vegetables

    Add the diced tomatoes and sliced green bell pepper to the skillet with the liver. Stir and cook for an additional 2-3 minutes until the vegetables are slightly softened.

    Serve

    Serve the charred liver and vegetables hot, accompanied by the crispy potatoes and a piece of freshly made Yemeni bread.
