Marinate the Beef

In a large bowl, combine the beef with salt, ground cumin, ground coriander, turmeric, and half of the garlic. Mix well and marinate for at least 1 hour, preferably overnight.

Cooking

Sauté the Aromatics

In a pressure cooker, heat the vegetable oil over medium heat. Add the chopped onions and the remaining minced garlic. Sauté until the onions are soft and golden.

Brown the Beef

Add the marinated beef to the pressure cooker and brown on all sides for about 5-7 minutes.

Add Spices

Add the cinnamon stick, cardamom pods, cloves, black peppercorns, bay leaves, and tomato paste. Stir well to combine.

Pressure Cook

Pour in the water, secure the lid, and cook under high pressure for about 30 minutes. Once cooked, allow the pressure to release naturally.

Cook the Rice

Remove the beef and strain the broth. Measure 4 cups of the broth and return it to the pressure cooker. Add the basmati rice and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until rice is tender.

Serve

Slice the beef and serve it over the rice. Garnish with fresh cilantro and lemon wedges.
