Confit Egg Yolk

Make the Pico de Gallo

In a bowl, combine diced tomatoes, red onion, cilantro, jalapeño, lime juice, and salt. Mix well and let sit for 30 minutes to allow flavors to meld.

Prepare Confit Egg Yolk

Preheat the oven to 150°F (65°C). In a small baking dish, combine egg yolks and cover with olive oil. Bake in the oven for about 1 hour until the yolks are set but still soft.

Make the Soy Glaze

In a small saucepan, combine soy sauce, brown sugar, and sesame oil. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes. Remove from heat and let cool.

Grilling

Grill the Broccolini

Preheat the grill to medium-high heat. Toss broccolini with olive oil, salt, and pepper. Grill for 3-5 minutes on each side until tender and slightly charred.

Assemble the Dish

On a serving plate, arrange the grilled broccolini. Drizzle with soy glaze, top with confit egg yolk, and spoon pico de gallo over the top. Serve immediately.
