Marinate the Sturgeon

In a medium bowl, whisk together olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper. Place the sturgeon fillets in a shallow dish and pour the marinade over the top. Cover and refrigerate for at least 30 minutes.

Preheat the Grill

Preheat your grill to medium-high heat.

Grill the Sturgeon

Remove the sturgeon from the marinade, allowing excess to drip off. Place the fillets on the grill and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork and has nice grill marks.

Add Capers and Lemon

During the last minute of grilling, add the lemon slices on the grill alongside the sturgeon and sprinkle the capers on top of the fillets.

Serve

Remove the sturgeon from the grill, serve immediately, and enjoy your California-style white sturgeon with grilled lemon and capers.
