Make the Pasta Dough

On a clean surface, mound the flour and create a well in the center. Crack the eggs into the well and add a pinch of salt. Using a fork, gently beat the eggs, gradually incorporating the flour until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling

In a bowl, mix the grated Parmesan cheese, ricotta cheese, salt, and black pepper until well combined.

Roll Out the Dough

Divide the rested dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, about 1/16 inch thick.

Assemble the Ravioli

Place a teaspoon of filling about 1 inch apart on one sheet of pasta. Moisten the edges of the pasta with water, then lay another sheet of pasta on top. Press around each mound of filling to seal, then cut out individual ravioli with a knife or a pasta cutter.

Cook the Ravioli

Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 4-5 minutes until they float to the surface and are tender. Remove with a slotted spoon.

Serve

Toss the cooked ravioli with melted butter or your choice of tomato sauce. Serve warm, garnished with additional Parmesan cheese if desired.
