    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5-7 minutes.

    Add Tomatoes

    Add the San Marzano tomatoes to the pot, along with salt and black pepper. Stir and cook for about 10 minutes, allowing the tomatoes to break down.

    Blend the Mixture

    Using an immersion blender, puree the tomato mixture until smooth. If using a regular blender, allow it to cool slightly before blending in batches.

    Incorporate Cream and Cheese

    Return the blended mixture to the pot. Stir in the heavy cream and crumbled blue cheese until well combined. Heat gently until warmed through, about 5 minutes.

    Prepare the Toast

    While the bisque is heating, toast the slices of bread until golden brown.

    Ladle the tomato bisque into bowls, top with green tomato chutney, and serve with toasted bread on the side. Garnish with fresh basil.
