    Prepare the Potatoes

    Preheat the oven to 375°F (190°C). Peel and slice the potatoes thinly. In a mixing bowl, combine the sliced potatoes with heavy cream, truffle oil, salt, and pepper. Spread the mixture in a greased baking dish and bake for 35-40 minutes until golden and tender.

    Cook the Pearl Onions

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the pearl onions and sauté until they are browned and tender, about 10 minutes. Set aside.

    Prepare the Blue Cheese Cream

    In a small saucepan, combine the remaining butter, black garlic (minced), and heavy cream. Cook over low heat until the mixture is heated through. Stir in the blue cheese until melted and creamy. Season with salt and pepper to taste.

    Cook the New York Strip

    Season the New York Strip steak with salt and pepper. Heat a grill or skillet over high heat. Sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for a few minutes.

    Slice the steak and serve it alongside the truffle scalloped potatoes. Top with butter-braised pearl onions and drizzle with the black garlic and blue cheese cream. Garnish with fresh parsley.
