1. Preheat the Oven

Preheat your oven to 425°F (220°C).

2. Prepare the Carrots

Wash and peel the heirloom carrots. Cut them into uniform pieces, about 2-3 inches long.

3. Make the Glaze

In a small bowl, whisk together olive oil, honey, maple syrup, salt, and black pepper until well combined.

4. Coat the Carrots

In a large mixing bowl, toss the carrots with the honey maple glaze until evenly coated.

5. Roast the Carrots

Spread the glazed carrots in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until they are tender and caramelized, stirring halfway through.

6. Add Pomegranate

Remove the carrots from the oven and let them cool slightly. Sprinkle with pomegranate seeds and fresh thyme, if using, before serving.
