Caramel Apple Terrine

Preparation

    Prepare the Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until soft. Drain and set aside.

    Cook the Apples

    Peel, core, and dice the apples. In a saucepan, combine diced apples, apple juice, and cinnamon. Cook over medium heat until apples are tender, about 10 minutes. Remove from heat and set aside.

    Make the Caramel

    In another saucepan, heat granulated sugar over medium heat, stirring constantly until it melts and turns amber. Remove from heat and carefully add butter and heavy cream. Stir until smooth, then add sea salt. Let cool slightly.

    Combine Ingredients

    In a mixing bowl, combine the cooked apple mixture with the caramel. Add the soaked gelatin and stir until well combined.

    Set the Terrine

    Pour the mixture into a terrine mold or a loaf pan lined with plastic wrap. Refrigerate for at least 4 hours or until set.

    Serve

    Once set, unmold the terrine and slice. Serve chilled, optionally drizzling with additional sea salt caramel.
