Method

Cooking the Steak

Prepare the Steak

Season the ribeye steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat.

Cook the Steak

Sear the steaks for 4-5 minutes on each side for medium-rare. Remove from skillet and let rest.

Preparing Sweet Potato Puree

Cook Sweet Potatoes

Peel and chop sweet potatoes, then boil until tender, about 15 minutes. Drain and return to pot.

Make Puree

Add butter, heavy cream, salt, and pepper to sweet potatoes. Mash until smooth.

Making Potato Gratin

Prep Potatoes

Preheat oven to 375°F (190°C). Thinly slice russet potatoes and layer in a baking dish.

Add Cream and Cheese

In a saucepan, heat heavy cream with minced garlic. Pour over potatoes and top with Gruyère cheese. Season with salt and pepper.

Bake

Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden.

Cooking Broccolini

Sauté Broccolini

In a skillet, heat olive oil over medium heat. Add broccolini, season with salt and pepper, and sauté for 5-7 minutes until tender.

Preparing Beef Jus

Make the Jus

In a saucepan, combine beef stock and red wine. Bring to a simmer and reduce by half. Whisk in butter and season with salt and pepper.
