Prepare the Cake Batter
Preheat your oven to 350°F (175°C). In a bowl, cream together the brown sugar and butter until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients
In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture, mixing until just combined. Fold in the diced pineapple.

Bake the Cake
Pour the batter into a greased 9x13-inch pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool.

Make Brown Butter Ice Cream
In a saucepan, melt 1 cup of butter over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma. Let it cool slightly, then mix with 2 cups of heavy cream, 1 cup of whole milk, 3/4 cup of brown sugar, and a pinch of salt. Chill the mixture, then churn in an ice cream maker according to the manufacturer's instructions.

Slice the cooled cake and serve with a scoop of brown butter ice cream on top.
