    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the fries and pat them dry with a paper towel. Fry them in batches for about 5-7 minutes or until golden brown. Remove and let them drain on paper towels.

    Season the Fries

    While still hot, sprinkle with salt to taste.

    Make the Special Sauce

    In a bowl, combine mayonnaise, ketchup, Dijon mustard, garlic powder, paprika, and salt. Mix until smooth.

    Serve

    Serve the fries hot with the special sauce on the side for dipping.
