Method

Preparing Goat Cheese Croquettes

1

Mix Ingredients

In a bowl, combine goat cheese, salt, black pepper, and mix until smooth.

2

Form Croquettes

Shape the mixture into small balls or patties and set aside.

3

Prepare Breading Station

Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

4

Bread the Croquettes

Dredge each croquette in flour, dip in the egg, and then coat with breadcrumbs.

5

Fry Croquettes

Heat vegetable oil in a pan over medium heat. Fry the croquettes until golden brown on all sides, about 3-4 minutes.

Cooking the Prime Strip

6

Season the Steak

Pat the prime strip steak dry with paper towels. Season generously with salt and black pepper on both sides.

7

Sear the Steak

Heat a cast-iron skillet over high heat. Add the steak and sear for 4-5 minutes per side for medium-rare, or until desired doneness.

8

Rest the Steak

Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Making Calabrian Chili Butter

9

Melt the Butter

In a small saucepan, melt the unsalted butter over low heat.

10

Add Chili and Garlic

Stir in Calabrian chili paste and minced garlic. Cook for 1-2 minutes until fragrant.

11

Finish the Butter

Remove from heat and stir in lemon juice. Set aside.

Preparing Broccolini

12

Blanch Broccolini

Bring a pot of salted water to a boil. Add broccolini and blanch for 2-3 minutes until bright green.

13

Sauté Broccolini

Drain and transfer broccolini to a skillet with olive oil, salt, and black pepper. Sauté for another 3-4 minutes until tender.
