Marinate the Chicken
In a bowl, combine the chicken thighs and buttermilk. Cover and refrigerate for at least 2 hours, or overnight for best results.
Prepare the Biscuit Dough
In a large bowl, mix the biscuit mix with cold water according to the package instructions. Form into biscuits and set aside.
Fry the Chicken
In a separate bowl, mix flour, cornstarch, baking powder, salt, pepper, and paprika. Remove the chicken from the marinade, letting excess buttermilk drip off. Dredge each piece in the flour mixture and fry in hot oil (350°F/175°C) until golden brown and cooked through, about 8-10 minutes. Drain on paper towels.
Cook the Biscuits
While the chicken is frying, bake the prepared biscuits according to package instructions until golden brown.
Assemble the Dish
Place a biscuit on each plate, top with fried chicken, pour sausage gravy over the top, and add a fried egg on the side.
