Prepare the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the rendered fat in the pan.

Cook the Fish

In the same skillet, add the fish filets skin-side down. Cook for about 4-5 minutes on medium heat, then flip and cook for another 3-4 minutes until fully cooked and flaky.

Fry the Eggs

In a separate pan, fry the eggs to your liking (sunny side up, over easy, etc.) using a little bit of the bacon fat if desired.

Prepare the Potatoes/Salad

If using breakfast potatoes, dice and sauté them in the bacon fat until golden brown and cooked through. If using salad, simply toss mixed greens with your choice of dressing.

Assemble the Plate

On a plate, arrange the cooked fish, fried eggs, crispy bacon, and a generous scoop of salsa verde. Serve with breakfast potatoes or salad on the side.
