Falafel Preparation
Soak Chickpeas
Rinse the dried chickpeas and soak them in water overnight (or for at least 8 hours). Drain and set aside.
Prepare the Mixture
In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but holds together when shaped.
Shape Falafel
Form the mixture into small balls or patties, about the size of a golf ball.
Heat Oil
In a deep pan, heat the oil over medium heat until hot.
Fry Falafel
Fry the falafel balls in batches, cooking for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
Prepare Pita Wraps
Warm the pita bread in a dry skillet or oven. Fill each pita with lettuce, tomatoes, tahini, and pickles.
Serve
Serve the falafel in the pita wraps alongside fries and salad.
