Prepare the Home Fries

Dice the potatoes and toss them in olive oil, salt, and pepper. Spread on a baking sheet and bake at 400°F (200°C) for about 25-30 minutes until golden and crispy.

Sauté the Spinach

In a skillet, heat butter over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper.

Poach the Eggs

In a pot, bring water to a gentle simmer. Crack the eggs into individual small bowls, then gently slide them into the water. Poach for 3-4 minutes for runny yolks or longer for firmer yolks. Remove with a slotted spoon.

Toast the English Muffins

While the eggs are poaching, split the English muffins and toast them until golden brown.

Assemble the Dish

On each toasted English muffin half, layer sautéed spinach, a poached egg, and drizzle with hollandaise sauce. Serve with home fries and a side of mixed greens.
