    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, transfer to a bowl and let it cool slightly.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked sushi rice while it's still warm. Allow it to cool to room temperature.

    Slice the Salmon Belly

    Using a sharp knife, slice the salmon belly into thin pieces, about 1/4 inch thick.

    Form the Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into an oval shape. Place a slice of salmon belly on top of the rice.

    Add Wasabi and Serve

    If desired, place a small amount of wasabi between the rice and salmon. Serve with soy sauce and nori strips on the side.
