Preparation Steps
1. Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, transfer to a bowl.
2. Season the Sushi Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until dissolved. Pour over the warm rice and fold gently to combine. Allow to cool to room temperature.
3. Prepare the Flounder
Slice the fresh flounder into thin pieces, about 1/4 inch thick. Set aside.
4. Form the Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 1-2 tablespoons) and mold it into an oval shape. Place a slice of flounder on top of the rice.
5. Add Wasabi
Add a small dab of wasabi on top of the flounder for flavor.
6. Serve
Arrange the nigiri on a plate. Serve with soy sauce for dipping and optionally with nori sheets.
