Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, transfer to a bowl.

Season the Rice

In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Pour this mixture over the cooked rice and gently fold it in. Allow the rice to cool to room temperature.

Prepare the Avocados

Cut the avocados in half, remove the pit, and scoop the flesh out. Slice the avocado into thin strips.

Form the Nigiri

Wet your hands and take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of avocado on top of the rice.

Serve with Yuzu Kosho Tamari

In a small bowl, mix the yuzu kosho with tamari. Drizzle it over the avocado nigiri or serve it on the side for dipping. Sprinkle sesame seeds on top and serve immediately.
