    Prepare the Potatoes

    Wash and peel the potatoes. Using a mandoline or sharp knife, slice the potatoes thinly (about 1/8 inch thick).

    Place the potato slices in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat them dry with paper towels.

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
