Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice. Allow it to cool to room temperature.

Slice the Madai
Using a sharp knife, slice the madai into thin pieces, about 1/4 inch thick. Make sure to cut against the grain for the best texture.

Form the Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of madai on top of the rice, pressing gently to adhere.

Serve
Serve the nigiri on a plate with a small amount of wasabi and soy sauce on the side.
